A Joy Wallace Catering Production Company, Miami

A Joy Wallace Catering Production was started as a full-service catering company in the fall of 1988, with Joy and a chef as the only full-time employees; working from her home and using a used straight truck, and rented trucks as needed. With the help of many part-time staff, the first big event, a seated dinner for 1800 guests in Palm Beach, was a roaring success and helped establish the fledgling company as a respected new member of the South Florida catering community. After moving the kitchen to a 950 square-foot warehouse, the company continued to flourish, and we purchased "Toot", an all-purpose step-van. In 1991, the full-time staff had grown to five and more space was desperately needed for the ever-increasing amount of equipment and people. A lease was signed for a 5000 square-foot warehouse in the Falls area and, with the investment of much time, labor and money, and despite the best efforts of Hurricane Andrew, became a state-of-the art commissary, warehouse, and offices.
